Spelt is an ancient grain which should not be confused with common bread wheat, rye, barley or even oats. It has certain properties which make it quite different. Its most notable difference is its ability to be tolerated by many with wheat sensitivities. Although it’s NOT gluten free, it contains less gluten than common wheat.
